The other day while grocery shopping, the girls saw a coconut and just had to buy one. We drained the water and then cracked it open. We each took a piece to nibble on. One after another the kids each took a bite and then spit the coconut out. lol David and I loved it, though. I think it’s my new favorite snack! After doing a quick Google search I decided to try to make coconut milk. There were a few different methods but I decided to try 1 cup of shredded coconut and 2 cups of boiling water.
All the websites said to use a blender but my food processor was already out so I figured it would be easier to use that. Bad idea. I wasn’t really paying attention and the liquid level was over the maximum line. :-/ Oops. Good thing I decided to put a dish cloth over the lid before I started it. I processed for about 2 mins, let cool and then strained it with some cheese cloth.
About 2 1/2 cups of freshly made coconut milk. Yum!
