Making Coconut Milk. It’s Risky Business…


The other day while grocery shopping, the girls saw a coconut and just had to buy one. We drained the water and then cracked it open. We each took a piece to nibble on. One after another the kids each took a bite and then spit the coconut out. lol David and I loved it, though. I think it’s my new favorite snack! After doing a quick Google search I decided to try to make coconut milk. There were a few different methods but I decided to try 1 cup of shredded coconut and 2 cups of boiling water.


All the websites said to use a blender but my food processor was already out so I figured it would be easier to use that. Bad idea. I wasn’t really paying attention and the liquid level was over the maximum line. :-/ Oops. Good thing I decided to put a dish cloth over the lid before I started it. Winking smile I processed for about 2 mins, let cool and then strained it with some cheese cloth.


About 2 1/2 cups of freshly made coconut milk. Yum!

New Year, New You

I used to weigh myself every. single. day. For the last few months my scales have been collecting dust. I’ve decided to just focus on how I feel and how my clothes are fitting. When they start to feel a bit snug, I know I need to step it up a notch. When they fall off, I know I need to step it up a notch. Winking smile

Weight really is just a number. I’ve starting incorporating strength training into my routine and it feels good! For some reason I decided to check the scales the other day and surprise! I gained 4lbs. However, my clothes are feeling looser and I’m getting toned. That’s all that matters.

I ordered a new Jillian Michael's dvd, yes another one, and I’m super excited to get it. I’m saving up for some kettle bells, too. I’m hoping to have sexy, muscular arms for summer.

Happy Birthday, Benjamin!

I decided it was time to dust of the ole’ blog and make a post in honor of my little boy, who turned 2 yesterday! I can’t believe how fast these last 2 years have gone. We celebrated his birthday a wee bit early this year since we had family visiting during the holidays. Benjamin is such a boy and loves all things tractors. Almost every single present he got bore the John Deere logo. He was thrilled!






Poor little guy developed a new allergy that night, V8 V-fusion juice. Sad smile His cheeks were screaming red all evening.


He blew that candle out like an old pro.


He didn’t mess around, either. No need to wait to be served. Winking smile


Benjamin is a feisty, independent, strong willed, sweet, compassionate, loving little boy. He is my right hand man. Where I go, he goes. He loves to snuggle and watch a good movie. He loves the outdoors and even gets himself all dressed up and tells me he wants to go out. He even puts his boots on the right feet, most of the time. His sweet voice melts my heart. His toes are kissable. His hair is soft and smells distinctly…boy. He is amazing and I am so thankful for him. Here’s to another great year exploring, learning and growing.  Happy Birthday baby boy! ♥

Finding My Way...

I'm happy to report that I'm not insane! Monday afternoon went much better than the morning. The fog lifted and I was able to get some things done.

I'm really enjoying my time away from Facebook. I'm getting lots done and supper is ready and on the table for my husband as soon as he gets home so I think he likes it, too.

I plan to get my spring cleaning done and then keep up with the housework on a daily basis. I feel like I've really failed as a stay-at-home mom and wife lately. My house is my job and if you look around it's easy to tell that I've failed. My house should be clean and tidy, not in the state that it's usually in. I know that I have kids running around so some toys on the floor is OK but it shouldn't constantly look like a hurricane flew through.

First off, it's nap-time for two little boys!

Starting today I have given up facebook during the day time. It seems like I don't know what to do with myself. I walk around aimlessly and am accomplishing nothing. I guess my mind just needs some time to detox and remember how to operate again. It's ridiculous how much *we* depend on the Internet and all it has to offer. I'm hoping to find myself again before the week is out. I fear insanity might set in if I don't. ;)

Every year I usually make the same resolutions. Lose 10 pounds. Be a better wife and mother. Keep my house cleaner. Same old, same old. Well, guess what? I'm making those same resolutions this year BUT I'm hoping to ACTUALLY stick to them...probably won't but I'm really going to try. To help I'm setting myself weekly goals. Like this week, I plan to de-clutter the whole house and lose 2 pounds. It's a very reasonable goal and hopefully I'll be able to achieve it. Next weeks goal will probably be to de-clutter and lose 2 pounds again because you all know what it's like with kids. Like the saying goes"Cleaning house while the kids are still growing, is like shovelling snow, while it's still snowing. So true.

Happy 1st Birthday Benjamin!


Yesterday my little boy turned 1 year old! I’m not sure how it happened that fast but it did. This past year has been simply amazing and I wouldn’t trade a single second for anything in this world. This little boy has stolen my heart and will forever be my baby.  I’m excited, yet a tiny bit sad, that my little guy is growing up. He is walking all around now, actually running most of the time now, and is at the beginning stages of talking. Those first words are so stinkin’ cute. He can say mama, dada, bye, hi, hot, thank you, up, ouch, doggie, uh oh and he attempts to say his sister’s names. They come out more like Ahhhh and Gahhhh. Smile I’m sure he says more but that’s all I can think of now.


Here he is sleeping in on his birthday. He must have known he needed the rest because he slept in until 10!
